These Easy Gooey Brownies are rich, decadent and incredibly satisfying with their gooey centre and fudgy texture. With simple ingredients and easy steps, you can whip up these indulgent brownies in no time for a delicious treat.
Ingredients:
- 150g butter
- 75g light soft brown sugar
- 150g dark chocolate, chopped
- 1 tablespoon golden syrup
- 3 eggs, beaten
- 125g golden caster sugar
- 1 teaspoon vanilla extract
- 150g plain flour
- 1/2 tsp baking powder
- 3 tbsp cocoa powder, plus extra for dusting
- 4-6 tbsp dulce de leche, caramel or chocolate hazelnut spread (for glazing)
Method:
Preheat the oven to 180°C (350°F). Grease and line a 20cm square baking tin with greaseproof paper, leaving a small overhang for easy removal.
Melt the butter, dark chocolate chips and golden syrup in a heatproof bowl placed over a pan of simmering water (double boiler method). Stir occasionally until smooth. Alternatively, microwave in short bursts, stirring between each burst until smooth.
In a separate bowl, whisk together the eggs, golden syrup and vanilla extract until well combined and slightly thickened.
Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and well combined.
Sift the plain flour, baking powder and cocoa powder into the wet mixture. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Pour the brownie mixture into the prepared baking tin and spread evenly with a spatula.
Spoon dollops of dulce de leche, caramel or chocolate hazelnut spread randomly over the brownie batter.
Use a skewer or knife to swirl the dollops of filling through the brownie dough to create a marbled effect.
Bake in the preheated oven for 25-30 minutes, or until the brownies have set on the edges but are still slightly soft in the centre.
