Doughnuts with a hint of vanilla, filled with vanilla ice cream, and served with caramelized apples – try a dessert that literally melts in your mouth!
Ingredients:
Caramelized and Flambéed Apples:
- Sugar – 75 g
- Butter – 5 g
- Orange – 1
- Green apples – 3
- Calvados – 60 ml
Yeast Dough:
- Sugar – 50 g
- Fresh yeast – 25 g
- Eggs – 4
- Butter – 50 g
- Milk – 120 ml
- Oil – 1 l
- Vanilla – 3 g
- Whiskey – 20 ml
- Wheat flour – 300 g
Additional:
- Raspberries – 120 g
- Vanilla ice cream – 200 g
Preparation:
Step 1: Prepare the Starter
- Sift the flour into a bowl and make a well in the center. Slice the vanilla pod lengthwise and scrape out the seeds with the blunt side of a knife. Boil the milk with the vanilla seeds and pod, then set aside to cool. Rub the yeast with 2 teaspoons of sugar until liquid. Remove the vanilla pod from the warm milk. Mix the milk thoroughly with the dissolved yeast. Pour the mixture into the flour, mix lightly to form a starter, cover with a cloth, and set aside for about 15 minutes.
Step 2: Knead the Dough
- Melt the butter in a microwave or on the stove. Mix the risen starter with the egg yolks, the remaining sugar, a pinch of salt, and the melted butter. Knead the dough until it no longer sticks to your hands. Add the alcohol and a bit of flour, and knead a bit more. Dust the dough with flour, cover with a cloth, and let it rise.
Step 3: Shape the Doughnuts
- Place the risen dough on a floured surface, knead, and dust with flour. Form a log from the dough and divide it into 10-12 equal pieces. Shape each piece into a ball and place on a floured board. Cover with a cloth and let rise for 15-25 minutes. Alternatively, you can let the dough rise in an oven preheated to 30°C.
Step 4: Fry the Doughnuts
- Fry the risen dough balls in hot oil until golden brown, turning them frequently to avoid burning. Drain excess oil on paper towels.
Step 5: Caramelize the Apples
- Sprinkle sugar into a dry pan and caramelize without stirring, only occasionally shaking the pan. Add a bit of orange juice and butter. Place the peeled apple wedges in the pan and cook on both sides until golden. Pour in the alcohol and flambé. Transfer the apples to a plate. Add a bit more orange juice to the pan and heat until a smooth sauce forms.
Fill the fried doughnuts with ice cream using a piping bag. Serve with caramelized apples, raspberries, and the sauce.
