Preparation
To prepare the dough: In a bowl, combine yeast with 50 ml of warm water, mix well, cover with a cloth, and let it sit for 15 minutes.
In another bowl, mix both flours and salt. In a saucepan, heat milk, honey, and add butter. Heat until the butter melts. Add yeast mixture to the flour, cooled milk mixture, and two beaten eggs. Mix/beat the dough with a wooden spoon until smooth. Then transfer the dough to a lightly floured surface and knead for about 5 minutes until it becomes smooth and soft. Place the dough in an oiled bowl, cover with a cloth, and let it rise for one hour.
After one hour, transfer the risen dough to a floured surface and roll it out to a thickness of 2 cm. Cut out circles with a glass, then use a smaller glass to cut out the holes. Fry in hot oil until golden brown on both sides. After frying, place them on a paper towel to drain excess oil.
Preparation of the glaze: Melt the chocolate and butter together in a double boiler, then remove from heat and add the heavy cream. Mix well and let it sit for 2-3 minutes. Dip the doughnuts in the glaze and set aside. American doughnuts can be sprinkled with colored sprinkles.
