Creamy Strawberry Crêpes

This exquisite dish is a celebration of simplicity and elegance, where the sweetness of the strawberries harmonises with the tangy cream cheese and zest of lemon to create a symphony of flavour in every bite.

Ingredients:

  • 4 cups fresh strawberries, sliced, halved
  • 2 cups all purpose flour
  • 1 1/4 cups powdered sugar
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup 2% milk
  • 2 tablespoons butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup heavy cream, whipped
  • 4 large eggs, room temperature
  • 1 cup water
  • 1/4 teaspoon salt

Method:

In a large mixing bowl, whisk together the flour, 1/4 cup icing sugar and salt.

In another bowl, beat the eggs, milk, water, melted butter, vanilla extract and lemon zest until well combined.

Gradually add the wet ingredients to the dry, whisking until smooth and free from lumps. Leave to stand for about 30 minutes.

In a mixing bowl, beat the softened cream cheese with 1 cup icing sugar and lemon juice until smooth.

Gently fold in the whipped cream until well combined.

Heat a non-stick frying pan or crepe pan over a medium heat. Grease lightly with butter or cooking spray.

Pour a small amount of batter into the centre of the pan, swirling to spread evenly.

Cook for 1-2 minutes until the edges are lightly golden, then flip and cook the other side for another minute.

Transfer the cooked crêpe to a plate and repeat with the remaining batter.

Spread a layer of the cream cheese mixture on each crepe.

Place a generous amount of sliced strawberries on top of the cream cheese mixture.

Roll up the crepe and garnish with more strawberries and a dusting of icing sugar.
