Haystack cookies with peanut butter

Fancy a sweet treat with a crunch? Try these peanut butter haystack cookies. They’re a delicious mix of caramel, peanut butter, chow mein noodles and marshmallows. Easy to make, these cookies are perfect for satisfying your sweet tooth.

Ingredients:

  • 3/4 cup butterscotch chips
  • 1/2 cup peanut butter
  • 1 3 oz. can chow mein noodles
  • 1 cup miniature marshmallows

Method:

Melt the butterscotch chips and peanut butter: In a medium saucepan, melt the butterscotch chips and peanut butter over low heat, stirring constantly, until smooth and well combined.

Add the chow mein noodles and marshmallows: Remove the saucepan from the heat. Add the chow mein noodles and marshmallows to the saucepan. Stir until completely coated with the caramel and peanut butter mixture.

Shape the biscuits: Drop by rounded tablespoonfuls onto a baking sheet lined with wax paper. Aim for a ‘haystack’ shape. Allow to cool: Leave the biscuits at room temperature until set and cool. This should take about 10 minutes.
