Cool off with Berry White Ice Pops. These refreshing treats combine the creaminess of milk with the sweetness of fresh berries. With a hint of honey and vanilla, they’re a delicious summer treat.
Ingredients:
- 1-3/4 cups 2% milk, divided
- 1 to 2 tablespoons honey
- 1/4 teaspoon vanilla extract
- 1-1/2 cups fresh raspberries
- 1 cup fresh blueberries
- 10 freezer pop moulds or 10 paper cups (3 ounces each) and wooden popsticks
Method:
In a small bowl, combine 1-1/4 cups milk, honey and vanilla extract. Stir until the honey is completely dissolved.
Fill each freezer pop mould or paper cup about 1/3 full with this milk mixture.
Freeze for about 1 hour or until set.
Meanwhile, in a blender, combine the fresh raspberries, fresh blueberries and the remaining 1/2 cup milk. Blend until smooth.
Pour the berry mixture over the frozen milk layer in each mould, filling each mould to the top.
Insert wooden popsticks into each mould.
Freeze for at least 4 hours or until set.
