Double Chocolate Biscotti

Double Chocolate Biscotti are crunchy, chocolatey biscuits that are the perfect accompaniment to your morning coffee or afternoon tea. With a rich cocoa flavour and sprinkled with vanilla or white chips and macadamia nuts, these biscotti are a delicious treat for any chocolate lover.

Ingredients:

  • 1 tube (18oz) refrigerated chocolate chip cookie dough
  • 1/2 cup vanilla or white chips
  • 1/2 cup roughly chopped macadamia nuts

Method:

Preheat the oven to 350°F (175°C).

Prepare a large baking sheet by lining it with parchment paper or a baking mat.

In a bowl, whisk together the flour, cocoa powder, baking powder and salt.

In a separate bowl, using an electric mixer, whisk together the melted butter and the granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Add the vanilla extract.

Stir in the dry ingredients until well combined.

Fold in the chocolate chips.

Cover and chill for 30 minutes.

Transfer the cooled dough to the prepared baking sheet and shape into an oval log about 1 inch thick.

Bake the log for about 30 minutes or until it’s dried out.

Allow the biscotti to cool slightly, then cut diagonally into pieces about 3/4 inch wide.

Turn the biscotti on their sides and return to the oven for 10 minutes to crisp up.

Allow to cool a little, then enjoy with your favourite hot beverage!
