A cookie crust filled with a coffee-flavored cream cheese filling. This dessert is perfect for coffee time, or even as a coffee substitute.

- Confectioners’ sugar – 100 g
- Egg – 1 pc.
- Egg yolk – 1 pc.
- Coffee liqueur – 1 teaspoon
- Cream cheese – 300 g
- Espresso – 4 tablespoons
- Dark chocolate – 50 g

- Butter – 60 g
- Chocolate oat cookies – 125 g

- Coffee chocolate – 100 g
Preparation
Step 1: Pre-bake the Muffin Bases Melt the butter. Finely grind the cookies and mix with the butter. Transfer the mixture to silicone muffin molds (or to paper-lined muffin tin cups) and lightly press down. Chill in the refrigerator for 15 minutes.
Pre-bake the crusts in a preheated oven at 180°C for 8 minutes. Remove and let cool for 5 minutes, then reduce the temperature to 160°C.
Step 2: Prepare the Filling Finely chop the dark chocolate and melt it in a hot water bath. Allow it to cool slightly. Mix the egg, egg yolk, and confectioners’ sugar until thick and creamy. Gradually add the liqueur, melted chocolate, and espresso, stirring continuously. Add the cream cheese and mix until smooth. Spread the filling over the pre-baked crusts. Bake the cheesecake bites in the hot oven at 160°C for about 30 minutes, until the filling is set. Remove, let cool, and refrigerate for at least 2 hours.
Step 3: Decorate the Cheesecake Bites Before serving, remove the cheesecake bites from the molds. Grate the coffee chocolate using a vegetable peeler into shavings or curls, and decorate the cheesecake bites with them.
