Coconut Milk Ice Cream

Delightful ice cream inspired by American cuisine. Coconut milk ice cream with American blueberries will simply amaze you.

Ingredients

  • Coconut milk: 1 can (400ml)
  • Coconut-flavored syrup: 1/2 cup
  • American blueberries: 200 g
  • Sugar: to taste
  • Spirits: 2 tablespoons

Preparation

Chill the can of coconut milk in the refrigerator. After opening, extract the solid part without the water.

In a blender, add washed blueberries, coconut-flavored syrup, and coconut milk. Blend thoroughly, then add spirits and sugar to taste. Mix until all ingredients are well combined.

You can complete the process in an ice cream maker according to the manufacturer’s instructions. If you don’t have such a machine, you can proceed as follows:

Pour the mixture into a container with a lid and place it in the freezer. After a few hours (the time depends on the temperature setting), when the edges are frozen but the center is not, transfer it to a blender and blend until it forms a thick paste. Return it to the freezer. After 2-3 hours, the ice cream will have the right consistency. However, if it freezes too hard, one hour before serving, transfer it from the freezer to the refrigerator. The ice cream will soften, and you can portion it out.
