Chocolate mousse made with eggs is a classic among desserts.
Ingredients
- Eggs – 4 pieces
- Sugar – 50 g
- Salt – a pinch
- 30% cream – 250 g
- Dark chocolate (>70% cocoa) – 200 g
Preparation
Attach the whisking attachment to the mixer. Separate the yolks from the whites and set aside. In the mixer bowl, add the egg whites, sugar, and salt. Beat them until foamy, selecting a time of 4 minutes and 30 seconds / speed setting 4. Transfer the beaten egg whites to another container and chill. Wash and dry the mixer bowl and whisking attachment.
Attach the whisking attachment to the mixer again. Pour the cold cream into the mixer bowl and whip it until stiff, selecting a time of 1 minute and 30 seconds / speed setting 4. Transfer the whipped cream to another container and chill. Wash and dry the mixer bowl and whisking attachment again.
Break the dark chocolate into pieces and place them in the mixer bowl. Chop it finely, selecting a time of 15 seconds / speed setting 8. Then scrape down the chocolate from the sides of the bowl and press it down to the bottom. Melt the chocolate, selecting a time of 2 minutes and 30 seconds / temperature 50°C / speed setting 1.
Add the previously set-aside egg yolks to the melted chocolate and mix them, selecting a time of 20 seconds / speed setting 1. Add the whipped egg whites and cream to the mixer bowl containing the mixed yolks and chocolate. Mix everything, selecting a time of 45 seconds / speed setting 3. After the first mixing, scrape down the sides and bottom of the mixer bowl and mix again, selecting a time of 10 seconds / speed setting 3.
