Chocolate truffles in pistachios

An astonishingly good snack that must be on the table.

Ingredients

  • Dark chocolate, 200 g
  • Heavy cream, 200 ml
  • Brown sugar, 6 tablespoons
  • Butter, 4 tablespoons
  • Pistachios (preferably fresh, or salted)

Preparation

Break the chocolate into pieces and place in a bowl. Melt it over a pot of lightly simmering water (double boiler).

Whip the cream with the sugar until stiff peaks form, then bring it to a boil. Pour the hot cream into the melted chocolate while mixing continuously.

When the cream is fully incorporated with the chocolate, add the butter piece by piece, continuing to mix.

Cool the mixture in the refrigerator. Once set, form the mixture into balls and roll them in finely crushed pistachios.
