Chocolate Muffins with Dried Cranberries

Simple to make chocolate muffins with chocolate glaze, dried cranberries, and hazelnuts. An ideal sweet snack!

Ingredients:

Chocolate Muffins

  • Sugar – 100 g
  • Dark chocolate – 100 g
  • Milk chocolate with hazelnuts – 100 g
  • Eggs – 2 pieces
  • Cocoa powder – 30 g
  • Wheat flour – 300 g
  • Milk – 250 ml
  • Sunflower oil – 100 ml
  • Baking powder – 2 teaspoons
  • Baking soda – 1 teaspoon
  • Dried cranberries – 50 g

Chocolate Glaze

  • Dark chocolate – 150 g
  • Butter – 1 tablespoon
  • Heavy cream (30%) – 100 ml

Decoration

  • Chocolate sticks – 6 pieces
  • Hazelnuts – a handful

Preparation:

Chocolate Muffins

Step 1: Prepare the Cake Base In a mixing bowl, add eggs and sugar, beat until very fluffy. In a separate bowl, sift flour, cocoa, baking soda, and baking powder.

Alternately add dry ingredients and milk to the eggs beaten with sugar. Mix continuously until a uniform batter is obtained. Finally, add oil to the mixing bowl and mix for about 1 minute.

Step 2: Prepare the Additions for Muffins Break the chocolates in half and place them in a food processor, select the fine grating function. Add the prepared chocolates to the batter.

TIP! Chocolate can also be grated with a fine grater or very finely chopped, but you need to work quickly to prevent it from melting too much.

Finely chop the dried cranberries and add them to the batter.

TIP! If the dried cranberries are dry, it’s worth soaking them before chopping and adding to the batter.

Step 3: Bake the Muffins Transfer the muffin batter to a piping bag, cut off the tip, and pipe into muffin cups. Fill each mold to about ¾ height. Place the muffin tin in a preheated oven and bake for about 25-30 minutes.

Chocolate Glaze

Step 1: Prepare the Glaze Break the chocolate into smaller pieces. Heat the cream until boiling. Add the broken chocolate to the hot cream, wait a few minutes for the chocolate to melt. When the chocolate has melted, mix until smooth. Then add softened butter and mix well.

Decoration

Step 1: Decorate the Muffins Dip the cooled muffins into the chocolate glaze. Place several toasted hazelnuts and half of a chocolate stick on each muffin.
