Chocolate Cloud Cake

Indulgently delicate, crumbly, and uniquely flavored cake with deep chocolate taste. You can prepare it without flour, using just a few simple ingredients. The sweetness is perfect!

Ingredients

Cake

  • Dark chocolate – 250 g
  • Sugar – 150 g
  • Vanilla extract – 1 teaspoon
  • Eggs – 5 pieces
  • Cocoa powder – 10 g
  • Butter – 120 g
  • Ground cardamom – 0.25 teaspoon
  • Wine vinegar – 5 ml

Cream

  • Powdered sugar – 30 g
  • Mascarpone cheese – 250 g
  • Lemon juice – 1 tablespoon
  • Heavy cream (36%) – 200 g

Additionally

  • Dark chocolate – 50 g
  • Fresh mint leaves – 2 g

Preparation

Step 1: Melt the Chocolate in a Water Bath Combine chopped chocolate into smaller pieces with softened butter in a glass bowl. Place the bowl over a pot of boiling water – this is called a water bath.

Add cocoa, cardamom, and salt. Mix until the ingredients are combined. Set aside to cool slightly.

Step 2: Beat Egg Whites Separate egg yolks from egg whites and set aside for later use.

Beat egg whites until stiff peaks form using a mixer or a stand mixer, gradually adding sugar (about every minute). Towards the end of beating, add vinegar and beat for another 1 minute. The egg whites should be white, fluffy, and glossy, and the sugar should be completely dissolved.

Step 3: Whisk Egg Yolks Whisk egg yolks with a whisk along with vanilla extract.

Step 4: Combine the Mixtures Add ⅓ of the beaten egg whites and gently mix until combined. Add the melted chocolate from the water bath. Mix.

Add the remaining beaten egg whites in two portions and gently mix again to combine all the ingredients.

Step 5: Bake the Cake Line the bottom of the baking pan with parchment paper.

Pour the prepared batter into the pan and bake for about 35 minutes in an oven preheated to 180°C. Remove the cake from the oven and let it cool.

Step 6: Prepare the Cream Whip the chilled heavy cream together with mascarpone cheese and sugar using a mixer or stand mixer for about 2 minutes until thickened. Towards the end of whipping, add powdered sugar and lemon juice.

Step 7: Decorate and Serve the Cake Spread the prepared cream over the cooled cake. Decorate the cake with grated chocolate on top and fresh mint leaves.
