Cheese Pillow Cake

Soft as a pillow and wonderfully cheesy! This cake not only delights with its exceptional taste but also with its appearance. Prepare it and bring smiles to the faces of your loved ones!

Ingredients

Cheese Filling

  • Sugar – 100 g
  • Eggs – 2 pieces
  • Vanilla – 2 pods
  • Wheat flour – 1 tablespoon
  • Potato starch – 1 tablespoon
  • Salt – a pinch
  • Full-fat cottage cheese – 500 g

Chocolate Batter

  • Sugar – 200 g
  • Dark chocolate – 100 g
  • Eggs – 4 pieces
  • Cocoa powder – 3 tablespoons
  • Wheat flour – 400 g
  • Milk – 60 ml
  • Rapeseed oil – 120 ml
  • Orange – 0.5 piece
  • Baking powder – 1.5 teaspoons
  • Orange juice – 60 ml
  • Salt – a pinch

Additional

  • Powdered sugar – 1 tablespoon
  • Butter – 15 g
  • Wheat flour – 0.5 tablespoon

Preparation

Step 1: Prepare the Cheese Filling Separate egg yolks from whites. Crumble the cottage cheese into a bowl and mash it with a spoon. Split the vanilla pods lengthwise and scrape out the seeds, then add them to the cottage cheese. Add egg yolks and salt. Mix until the mixture becomes smoother.

Step 2: Beat Egg Whites with Sugar In a high-sided container, beat egg whites with half of the sugar using a hand mixer for about 3 minutes. Then add the remaining sugar and beat the egg whites until stiff peaks form.

Step 3: Combine Egg Whites with Cheese Filling Transfer the beaten egg whites to the cottage cheese. Add potato and wheat flour. Mix. Set aside the cheese filling while preparing the chocolate batter.

Step 4: Prepare the Chocolate Batter Separate egg yolks from whites. Place egg whites and half of the sugar into the bowl of a stand mixer. Mix for about 5 minutes, then add the remaining sugar, 4 egg yolks, salt, and grated orange zest. Mix until all ingredients are combined.

Sift flour, cocoa powder, and baking powder into a separate bowl, mix, then add to the chocolate batter base. Add milk and orange juice. Melt the chocolate in a saucepan. Let it cool for about 3 minutes, then mix it with oil and add it to the batter. Mix well.

Step 5: Pour the Chocolate Batter into the Pan Grease the bottom and sides of a cake pan with butter and dust with flour. Pour the chocolate batter into the pan and spread it evenly with a spatula.

Step 6: Pipe the Cheese Filling Transfer the cheese filling to a piping bag and pipe it onto the chocolate batter: squeeze strips lengthwise and crosswise across the pan to form a grid. Additionally, pipe the cheese filling along the edges of the chocolate batter.

Step 7: Bake the Cake Bake the cake for about 40-45 minutes in an oven preheated to 175°C.

After baking, let the cake cool, then dust it with powdered sugar sifted through a sieve.
