Carrot Cake with Chocolate

This autumn carrot cake with a delicious chocolate glaze will be loved by both adults and children!

Ingredients

Cake:

  • Sugar: 215 g
  • Lemon: 1
  • Eggs: 4
  • Carrots: 210 g
  • Butter: 225 g
  • Baking powder: 2 teaspoons
  • Wheat flour: 220 g
  • Milk chocolate with nuts: 100 g

Chocolate Glaze:

  • Butter: 25 g
  • Heavy cream (30%): 115 g
  • Milk chocolate with nuts: 250 g

Preparation

Step 1: Prepare the Cake Batter

  1. Cream the butter with the sugar, adding one egg at a time. After each egg, add a portion of the sifted flour.
  2. Once all eggs are incorporated, add the remaining flour, baking powder, lemon zest, grated carrots, and chopped chocolate.
  3. Mix thoroughly to combine all ingredients.
  4. Transfer the batter to a springform pan and bake at 180°C (356°F) for about 1 hour and 20 minutes.

Step 2: Make the Chocolate Glaze

  1. Heat the chocolate to 40°C (104°F). Separate the nuts from the chocolate.
  2. Bring the cream to a boil, then pour it over the chocolate and mix thoroughly.
  3. Add the room temperature butter and mix until smooth.

Step 3: Decorate the Cake

  1. Once the cake is baked and cooled, cover it with the chocolate glaze.
  2. Sprinkle the nuts (separated from the chocolate) over the top for decoration.
