Perfect for last minute guests or when you’re in the mood for something sweet without the fuss, these cookies come together in a jiffy and are sure to bring a smile to faces of all ages.
Ingredients:
- 1 (15.25-oz.) box Classic Yellow Cake Mix
- 2 large eggs, room temperature
- 1/2 cup vegetable oil, plus extra for greasing
- 3/4 cup sprinkles
Method:
Preheat the oven to 175°C (350°F). Lightly grease a baking sheet with vegetable oil or line with greaseproof paper.
In a large bowl, whisk together the cake mix, eggs and vegetable oil. The mixture will be thick.
Gently fold in the sprinkles until they are evenly distributed throughout the mixture.
Using a cookie scoop or spoon, shape the dough into balls and place about 2 inches apart on the prepared baking sheet.
Bake for 9 to 11 minutes or until the edges are set and the centres are still slightly soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
