Easy Chocolate Fudge Cake

Surprise your friends with this delicious chocolate cake. Perfect for a birthday or tea party!

Ingredients:

  • 1 and 3/4 cups all purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Method:

Preheat the oven to 175°C (350°F). Grease and flour two 9-inch round cake pans.

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda and salt.

Add the eggs, milk, oil and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.

Stir in the boiling water until the dough is well combined. The batter will be thin, but that’s OK.

Pour the batter evenly into the prepared cake tins.

Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the centre of the cakes comes out clean.

Remove the cakes from the oven and leave in the cake pans to cool for 10 minutes. Transfer the cakes to wire racks to cool completely.

Once the cakes have cooled, you can glaze them with your favourite chocolate icing or ganache.
