Ingredients

Cafe affogato:

  • Ice cream (cream or vanilla, store-bought or homemade from this recipe)
  • Espresso coffee
  • Caramel sauce (optional, store-bought or from the recipe below)

Caramel sauce (about 1 1/2 cups):

  • White sugar, 1 cup
  • Water, 1/4 cup
  • Heavy cream (30%), 1 cup

Preparation

Cafe affogato: Place a scoop of ice cream in cups, bowls, or small dishes, pour caramel sauce over it, and add hot and strong espresso (a small cup). Serve immediately.

Caramel sauce: Pour the sugar and water into a medium saucepan. Set over medium heat and stir until the sugar completely dissolves. Increase the heat to high (it should be high but moderate). Cook for about 9 minutes or less, until the sugar turns a light brown color. Do not stir the mixture. Be careful, as the sugar will quickly change from light brown to dark brown and start to burn and smoke. You need to catch the moment when the caramel is brown but not burnt.

When the mixture turns brown, immediately pour in the cream while quickly stirring. Be careful, as the mixture will bubble vigorously. Stir and cook until the sauce has a uniform consistency and thickens slightly. The sauce is now ready to use. It can be stored for a long time. Several days outside the fridge, and then it can be chilled.
