Blueberry pancakes

Blueberry pancakes

Tastes absolutely divine with a drizzle of maple syrup.

Ingredients

  • Flour, 1 1/3 cups
  • Sugar, 3 tablespoons
  • Baking powder, 2 1/2 teaspoons
  • Salt, a pinch
  • Buttermilk, 1 1/4 cups
  • Eggs, 2 large
  • Melted butter or oil, 2 tablespoons + extra for frying
  • Blueberries, 1 cup + extra for garnish

Preparation

In a large bowl, mix the sifted flour with sugar, baking powder, and salt. In another bowl, blend the buttermilk, eggs, and 2 tablespoons of melted butter. Combine with the dry ingredients, then gently fold in the blueberries.

Heat a greased skillet, and spoon 2 tablespoons of batter per pancake onto the skillet. Cook on medium heat until golden brown. Place on paper towels or directly on plates. Drizzle with maple syrup and garnish with extra blueberries.

Serving suggestion

Serve with maple syrup, or cream with sugar and vanilla sugar, vanilla yogurt, etc.
