Blackberry Frozen Yoghurt

Cool down with a scoop of Blackberry Frozen Yogurt. This recipe is a delicious fusion of juicy blackberries and creamy vanilla yoghurt for a refreshing dessert. With a hint of lemon and a touch of sweetness, it’s the perfect treat to beat the heat.

Ingredients:

  • 5 cups of fresh or frozen blackberries
  • 1/3 cup water
  • 2 tablespoons lemon juice
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 cups nonfat frozen vanilla yoghurt

Method:

In a saucepan over medium heat, combine the blackberries, water, lemon juice and sugar.

Bring to the boil, stirring occasionally, until the sugar has dissolved and the berries are soft.

Remove from the heat and allow to cool slightly. Then blend until smooth.

Strain the mixture through a fine sieve to remove the seeds and squeeze to extract as much liquid as possible.

Stir the vanilla extract into the blackberry mixture.

In a large bowl, gently fold the blackberry mixture into the frozen vanilla yoghurt until well combined.

Pour the mixture into an ice-cream maker and churn according to the manufacturer’s instructions.

Once the yoghurt has reached the soft-serve consistency, transfer to a container and freeze until firm, usually 2-4 hours.
