Blackberry-Banana Ice Cream Trifle

A delicious frozen dessert with whipped cream combining a variety of flavors: the sweet taste of banana and the tartness of blackberries.

Ingredients:

  • Banana – 1 piece
  • Brown sugar – 90 g
  • Blackberries – 300 g
  • Butter – 75 g
  • Almonds – 40 g
  • Oats – 60 g
  • Apple juice – 4 tablespoons
  • All-purpose flour – 50 g
  • Heavy cream (30%) – 200 g
  • Walnut ice cream – 600 g

Preparation:

Cut the butter into cubes. Knead with 75 g of brown sugar, oats, and flour, then flatten to a thickness of about 0.5 cm on a baking sheet lined with parchment paper. Bake in a preheated oven at 170°C for 20 minutes, until crispy. Cool on the baking sheet, then break into large pieces and place in a large, shallow bowl. Drizzle with juice.

Peel and wash the blackberries. Peel the banana, cut into thin slices. Mix both ingredients with the remaining sugar and spread over the crispy layer. Refrigerate for at least 1 hour. Coarsely chop the almonds and sauté them in a pan without adding fat, then cool.

Before serving, whip the cream until stiff peaks form and transfer it to a piping bag with a star-shaped tip. Arrange scoops of ice cream on top of the fruit, squeeze rosettes of whipped cream between them, and sprinkle with almonds before serving.
