Biscuits with Nuts and Dried Fruits

Ingredients

  • Brown sugar – 150 g
  • Egg – 1
  • Butter – 150 g
  • Whole wheat flour – 60 g
  • Almonds – 30 g
  • Hazelnuts – 30 g
  • Walnuts – 30 g
  • Baking soda – 0.5 tsp
  • Dried cranberries – 30 g
  • Dried apricots – 30 g
  • Spelt flakes – 150 g
  • Apple chips – 15 g
  • Dried cherries – 50 g

Instructions

Step 1: Combine Chopped Nuts and Dried Fruits

  1. Combine chopped nuts and diced dried fruits with spelt flakes, brown sugar, baking soda, whole wheat flour, softened butter, and egg. Once the ingredients are combined, form the dough into a ball, place it in a bowl, cover with a cloth, and let it rest for about 1 hour.

Step 2: Bake the Cookies

  1. After the resting time, remove the dough onto a board, form it into a roll, and divide it into 20 pieces. Shape each piece into a ball, flatten it in your hands, and place it on a baking sheet lined with parchment paper. When placing them, leave enough space between each cookie, as they will expand during baking.
  2. Bake in an oven preheated to 180°C (convection) or 190°C (without convection) for 12-13 minutes. Once baked, remove the cookies from the oven and let them cool. Store the cooled cookies in an airtight container to keep them crunchy.
