Ingredients
- Brown sugar – 150 g
- Egg – 1
- Butter – 150 g
- Whole wheat flour – 60 g
- Almonds – 30 g
- Hazelnuts – 30 g
- Walnuts – 30 g
- Baking soda – 0.5 tsp
- Dried cranberries – 30 g
- Dried apricots – 30 g
- Spelt flakes – 150 g
- Apple chips – 15 g
- Dried cherries – 50 g
Instructions
Step 1: Combine Chopped Nuts and Dried Fruits
- Combine chopped nuts and diced dried fruits with spelt flakes, brown sugar, baking soda, whole wheat flour, softened butter, and egg. Once the ingredients are combined, form the dough into a ball, place it in a bowl, cover with a cloth, and let it rest for about 1 hour.
Step 2: Bake the Cookies
- After the resting time, remove the dough onto a board, form it into a roll, and divide it into 20 pieces. Shape each piece into a ball, flatten it in your hands, and place it on a baking sheet lined with parchment paper. When placing them, leave enough space between each cookie, as they will expand during baking.
- Bake in an oven preheated to 180°C (convection) or 190°C (without convection) for 12-13 minutes. Once baked, remove the cookies from the oven and let them cool. Store the cooled cookies in an airtight container to keep them crunchy.
