Beetroot-Strawberry Dessert with Cherry Sauce and Granola

Cream made from beets, strawberries, and cherries is the perfect answer to a nutritious dessert or a great breakfast. Excellent on the day of preparation, but also on the second day, after spending a night in the fridge. Serve it with granola or other favorite additions!

Ingredients:

  • Raspberry granola – 4 tablespoons
  • Frozen strawberries – 200 g
  • Cherries – 300 g
  • Agave syrup – 3 tablespoons
  • Fresh mint – 8 leaves
  • Cooked beets – 2 pieces

Preparation:

Step 1: Fry the cherries Put the cherries on a heated, dry pan (if they contain juice, also pour it into the pan). Add agave syrup. Mix occasionally. Fry over high heat until the cherries partially break down and release juice. Turn off the heat when the mixture starts to thicken and acquire a sauce-like consistency.

Step 2: Blend the ingredients for the cream Transfer the quartered beets, frozen strawberries, and 4 tablespoons of cherry sauce from the pan to a blender. Blend until the ingredients form a smooth cream. Refrigerate the cream for about 15 minutes.

Step 3: Serve the cream with toppings Spread the chilled cream on plates, sprinkle with granola, and drizzle with cherry sauce. Decorate with fresh mint leaves.
