Pancakes made with rye flour, bananas, and cinnamon are a perfect idea for a sweet family breakfast!
Ingredients – batter
- Bananas: 2
- Cinnamon: A pinch
- Eggs: 4
- Butter: 20 g
- Clarified butter: 25 g
- Rye flour: 180 g
- Honey: 2 tablespoons
- Whole milk: 180 ml
- Baking powder: 2 teaspoons
- Salt: A pinch
Ingredients – honey-glazed walnuts:
- Honey: 150 g
- Walnuts: 100 g
Preparation
Separate the egg yolks from the whites. Place the yolks in a bowl, add honey, salt, and beat everything. Gradually add milk alternating with flour mixed with baking powder, while continuously beating. Melt the butter and add it to the batter.
Beat the egg whites until stiff peaks form, then fold them into the batter and mix well. Dice the bananas and add them to the batter. Optionally, season with cinnamon to taste. Fry the pancakes on both sides in a heated pan with clarified butter.
Finely chop the walnuts. Pour honey onto a cold pan and heat it up. Add the walnuts and caramelize them for about 2 minutes. Decorate the pancakes with the hot caramelized walnuts.
