Start your morning with these Banana Oat Pancakes, a healthy twist on a breakfast classic. Packed with the goodness of oats and banana, they’re a nutritious yet delicious choice. Simple, satisfying and delicious, these pancakes are sure to brighten up your day!
Ingredients:
- 125ml oat milk
- 2 eggs, separated
- 1 small banana
- 100g rolled oats
- 2 teaspoons baking powder
- A few drops of vanilla extract
- Oil (avocado oil spray recommended)
- Low fat yoghurt and fruit to top
Method:
Place the oat milk, egg yolks, banana, oats, baking powder and vanilla extract in a blender. Blend until smooth.
Whisk the egg whites:
In a separate bowl, whisk the egg whites until stiff.
Gently fold the whisked egg whites into the batter to keep the mixture light and airy.
Heat a non-stick frying pan over a medium heat and lightly spray with avocado oil.
Drop about 2 tablespoons of batter into each pancake and cook for 1-2 minutes until the base is set and bubbles appear on the top.
Carefully flip the pancakes and cook for another minute or until golden brown.
Top the pancakes with low-fat yoghurt and fruit of your choice for a delicious finish.
