Banana Oat Blender Pancakes

These Banana and Oat Blender Pancakes are easy to make and packed with good-for-you ingredients like oats, bananas, eggs and milk. Serve with vanilla-flavoured yoghurt, fresh strawberries, maple syrup and chopped pistachios for a delicious and nutritious breakfast.

Ingredients:

  • 2 cups (180g) oatmeal
  • 3 ripe bananas, chopped
  • 3 Coles Australian free-range eggs
  • 1 cup (250ml) skimmed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 2/3 cup (190g) reduced fat vanilla flavoured yoghurt
  • 250g strawberries, thinly sliced
  • 2 tbsp maple syrup
  • 1 tablespoon Coles Australian Pistachios, chopped

Method:

Place the oats, chopped bananas, eggs, milk, vanilla extract and baking powder in a blender. Blend until smooth and well combined. If the batter is too thick, add a little more milk to achieve a pourable consistency.

Heat a non-stick frying pan or griddle over a medium heat. Lightly coat with cooking spray or a small amount of oil.

Drop about 1/4 cup of batter per pancake into the hot pan. Cook until bubbles form on the surface and the edges begin to set, about 2-3 minutes. Flip and cook the other side until golden brown and cooked through, a further 1-2 minutes. Repeat with the rest of the batter.

While the pancakes are cooking, prepare the toppings. Slice the strawberries and chop the pistachios.

Stack the cooked pancakes on serving plates.

Top each stack with a dollop of low-fat vanilla-flavoured yoghurt.

Arrange the sliced strawberries on top of the yoghurt.

Drizzle with maple syrup and sprinkle with chopped pistachios.
