Muffins with bananas and nuts. Delicious and very easy to make with commonly available ingredients. Banana muffins are a perfect choice for any occasion.
Ingredients
- Bananas, 2 medium
- Vegetable oil, 1/2 cup (125 ml)
- Milk, 1 cup (250 ml)
- Egg, 1
- Peanut butter (optional), 1 tablespoon
- Flour, 2 cups (320 g)
- Brown or white sugar, 2/3 cup (160 g)
- Baking powder, 1 teaspoon
- Baking soda, 1 teaspoon
- Apple pie spice (or 1/2 teaspoon cinnamon + 1 tablespoon vanilla sugar), 1/2 teaspoon
- Walnuts or pecans, 125 g
Preparation:
Preheat the oven to 180°C (350°F) (top and bottom heat). Line a muffin tin with 12 paper liners.
Peel the bananas and mash them with a fork (you can also sprinkle them with a bit of lemon juice). Put them in a bowl.
Add the vegetable oil, milk, egg, and peanut butter and mix everything with a whisk.
In another bowl, combine the flour, sugar, baking powder, baking soda, and spice. Add chopped nuts (reserving about 1/4 for topping). Mix everything well with a spoon.
Add the dry ingredients to the bowl with the wet ingredients and gently mix with a spoon, just until combined (stop mixing as soon as the dry flour disappears).
Fill the paper liners with the batter, sprinkle with the reserved nuts, and bake for about 30 minutes. Remove from the oven and let cool.
