Banana Cookies

These cookies aren’t just baked goods; they’re edible smiles, little tokens of joy that connect us through shared flavours. As you drizzle them with melted dark chocolate, think of them as a work of culinary art – a masterpiece in every bite.

Ingredients:

Cookie dough base:

  • 125g salted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup caster sugar
  • 1 egg, beaten
  • 1 cup plain rolled oats
  • 1/2 cup self-raising flour
  • 1/2 cup wholemeal self-raising flour

For the banana cookies:

  • 1 ripe banana, mashed
  • 1/2 cup coarsely chopped banana chips
  • 100g dark chocolate, melted

Method:

Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.

In a mixing bowl, cream together the softened butter, brown sugar and caster sugar until light and fluffy.

Add the egg and beat until well combined.

Stir in the oats, self-raising flour and wholemeal self-raising flour until you have a thick cookie dough.

Fold in the mashed ripe banana and chopped banana chips.

Drop the dough onto the prepared baking tray by the spoonful, leaving space between each cookie.

Bake for 12-15 minutes or until golden around the edges.

Leave the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

When cooled, drizzle or dip the cookies in melted dark chocolate for an extra indulgent treat.
