Ingredients:
- 1 ½ cups plain (all purpose) flour
- 2 teaspoons baking powder
- 1 ½ cups castor sugar (superfine)
- 125g melted butter (softened to room temperature)
- 1 cup milk
- 1 teaspoon vanilla essence
Method:
Preheat the oven to 180°C (350°F).
In a large mixing bowl, whisk together the flour, baking powder and caster sugar.
Add the melted butter, milk and vanilla essence to the dry ingredients. Mix well until you have a smooth dough.
Pour the mixture into a greased cake tin.
Bake for about 30-35 minutes or until a toothpick inserted in the centre comes out clean.
Allow the cake to cool completely before decorating.

Buttercream icing: In the bowl of an electric mixer, beat 125g (4.5 oz/½ cup) softened butter with 1 ½ cups sifted icing sugar. Add 1 teaspoon vanilla essence and 2 tablespoons milk and whisk until fluffy. Spread the buttercream over the cooled cake.
Blue food colouring: Add a few drops of blue food colouring to the buttercream for a fun twist.
Strawberry sour cream lollies: Cut the sour straps into desired shapes and place on top of the cake.
