Balsamic Parfait with Vanilla-Braised Apricots

A delightful creamy dessert – perfect for entertaining guests. Served with sweet apricots, it tantalizes not only with its taste but also its appearance!

Ingredients:

  • Balsamic vinegar – 3 teaspoons
  • Powdered sugar – 125 g
  • Vanilla sugar – 2 packets
  • Eggs – 2 pieces
  • Apricots – 600 g
  • Cream (18%) – 200 g
  • Apple juice – 100 ml
  • Heavy cream (30%) – 150 g

Preparation:

  1. Bring the cream to a boil. Beat egg yolks and powdered sugar until creamy. Slowly add the hot cream while stirring. Place the bowl over a hot water bath and beat for about 7 minutes until the mixture thickens slightly. Remove from the water bath and let it cool, stirring occasionally.
  2. Add the sour cream and mix, then add balsamic vinegar to taste. Pour the mixture into a rectangular dish (about 20 cm) lined with plastic wrap and place it in the freezer overnight.
  3. Wash the apricots, remove the pits, and slice the flesh. Bring to a boil with apple juice and vanilla sugar, then simmer over low heat for 5-7 minutes until soft. Allow to cool.
  4. Remove the parfait from the dish, discard the plastic wrap, and slice it into rounds. Serve with the braised apricots.

Tip: The parfait will taste especially good if you use Deluxe apple balsamic vinegar.
