Baklava roll

Baklava roll

Delicious roll made entirely of dried fruits, without added sugar, filling, and vegan. It will be perfect as a sweet snack for children and beyond!

Ingredients

  • Cinnamon – a pinch
  • Figs – 150 g
  • Sunflower seeds – 60 g
  • Cashews – 70 g
  • Walnuts – 50 g
  • Raisins – 70 g
  • Salt – a pinch
  • Dried apricots – 100 g
  • Dried cranberries – 70 g
  • Coconut flakes – 4 tablespoons

Preparation

Finely chop the walnuts and cashews and roast them with sunflower seeds, cinnamon, and a pinch of salt in a dry pan. Mix figs, apricots, cranberries, and raisins in a food processor. Fry the mixture in a non-stick pan for about 5 minutes until slightly evaporated.

Add the roasted nuts and sunflower seeds to the dried fruit mixture. Mix everything and set aside to cool (the mixture should be cool enough to be shaped by hand).

Prepare two sheets of parchment paper, each about 30 cm long. Place the dried fruit mixture on one of the sheets and form a roll about 30 cm long. Sprinkle coconut flakes on the other piece of parchment paper. Gently transfer the roll to the coconut-covered parchment paper and roll it in the flakes.

Wrap the prepared roll in aluminum foil and refrigerate for at least 3 hours. After this time, remove it from the refrigerator and slice into discs about 1 cm thick.
