This baked sweet potato smoothie is pure health in a glass. Prepare this drink, and you’ll quickly regain your energy and feel better. Plus, you’ll enjoy the delicious sweetness of sweet potatoes.
Ingredients
- Baked sweet potatoes, 1 cup
- Orange juice, 250 ml
- Apple juice, 250 ml
- Almond flakes, 1/3 cup
- Freshly grated ginger, 1 teaspoon
- Passion fruit (optional, for decoration)
Preparation
Wash the sweet potatoes, cut them into 2 cm slices, place them on a baking sheet lined with parchment paper, cover with a piece of aluminum foil, and bake for about 30-35 minutes at 180°C (350°F) until tender. Scoop out the flesh and measure 1 cup. Let it cool.
Soak the almond flakes in a small amount of boiling water (just enough to cover them) and let them sit for about 10 minutes, then drain.
In a blender container, combine the cooled sweet potato flesh, orange juice, apple juice, drained almond flakes, and ginger. Blend until smooth.
Pour the smoothie into glasses. Optionally, top with fresh passion fruit for decoration.
