Baked post-workout protein bars

Prepare homemade protein bars that will be the perfect snack after your workout. Chickpeas, oats, dried fruits, and a few aromatic ingredients will give you the energy to keep going.

Ingredients

  • Dried cranberries, 40g
  • Canned chickpeas, 240g
  • Cinnamon, 1 teaspoon
  • Vanilla, 3g
  • Coconut milk, 160g
  • Chia seeds, 2 tablespoons
  • Oats, 55g
  • Salt, a pinch
  • Dried apricots, 45g
  • Maple syrup, 4 tablespoons

Preparation

Drain and pat dry the chickpeas with paper towels. Place them in a blender along with coconut milk, maple syrup, cinnamon, scraped seeds from the vanilla pod, and a pinch of salt. Blend until smooth. Add apricots, oats, and chia seeds. Blend again until well combined.

Add dried cranberries and mix. Transfer the mixture to a baking tray lined with parchment paper. Bake in an oven preheated to 180°C for 30 minutes.
