- Apples – 2
- Butter – 100 g
- Eggs – 2
- Milk (any kind) – 125 ml
- Flour – 250 g
- Ground almonds – 50 g (optional)
- Vanilla sugar – 1 tablespoon
- Cinnamon – 1 teaspoon
- Baking powder – 1 teaspoon
- Baking soda – 1 teaspoon
- Sugar – 150 g (I used brown sugar)
- Honey – 2 tablespoons (or 20 g additional sugar)
- Chopped almonds – 20 g (for topping, optional)
Preparation
Preheat the oven to 190°C (375°F). Line a 12-cup muffin tin with paper liners.
Peel the apples and grate them on the large holes of a grater.
Melt the butter in a bowl, then add the milk and eggs, and whisk until well combined.
In another bowl, combine the flour, ground almonds (if using), vanilla sugar, cinnamon, baking powder, baking soda, and sugar. Mix thoroughly.
Add the wet ingredients and the grated apples to the dry ingredients, along with the honey if using. Stir gently with a spoon until just combined.
Spoon the batter evenly into the muffin liners. Sprinkle with chopped almonds if desired and bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
