Apple dumpling

There’s something incredibly comforting about apple dumplings. They’re the perfect comfort food to enjoy on a lazy weekend or to liven up a midweek dinner. Serve them hot with a scoop of ice cream, a dollop of whipped cream or a drizzle of caramel sauce for an extra special treat.

Ingredients:

  • 2 1/2 cups all purpose flour (Bob’s Organic Unbleached White)
  • 1 teaspoon salt
  • 1 cup vegetable shortening
  • 8 tablespoons ice-cold water
  • 3/4 cup light brown sugar
  • 1/4 cup all purpose flour (Bob’s Organic Unbleached White)
  • 3/4 teaspoon ground cinnamon
  • Freshly ground nutmeg (to taste)
  • 5 Envy apples, peeled, cored and diced
  • 1 lemon, zested and juiced
  • 2 eggs, beaten
  • Turbinado sugar

Method:

In a large bowl, combine 2 1/2 cups flour and 1 teaspoon salt. Cut in the vegetable shortening until the mixture resembles coarse crumbs.

Gradually add the iced water, stirring until the mixture forms a ball. Wrap in cling film and refrigerate for at least 30 minutes.

Preheat the oven to 190°C (375°F). Grease a baking tin.

In a separate bowl, mix together the light brown sugar, 1/4 cup flour, cinnamon and nutmeg.

Toss the diced apples with the lemon zest and juice, then add to the sugar mixture to coat well.

On a floured surface, roll the dough into a large rectangle about 1/8 inch thick. Cut into squares large enough to wrap around the apple pieces.

Place a dollop of apple mixture on each square. Fold the corners towards the centre and pinch to seal.

Place the dumplings in the prepared baking tin. Brush each dumpling with the whisked eggs and sprinkle with turbinado sugar.

Bake for 35-40 minutes or until the dumplings are golden brown and the apples are tender.

Serve warm, perhaps with a scoop of vanilla ice cream or a drizzle of caramel sauce.
