Almond Joy Cookies

Whether served with a cup of coffee, as a dessert or a delightful gift, these cookies capture the essence of indulgence in every bite.

Ingredients:

Cookie dough:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon almond extract
  • 2 cups (240g) all purpose flour
  • 1/2 teaspoon kosher salt
  • 1 cup finely chopped toasted almonds
  • Coconut Filling
  • 1 cup (60g) unsweetened coconut flakes
  • 1/4 cup sweetened condensed milk
  • 1 large egg white
  • Pinch of kosher salt

Assembly:

  • 21 whole almonds (for topping)
  • 1 cup (about 6oz) milk chocolate, melted

Method:

In a large bowl, cream the softened butter and granulated sugar with a hand or stand mixer until light and fluffy.

Add the egg yolks and almond extract to the butter mixture. Whisk until well combined.

In a separate bowl, whisk together the all-purpose flour and kosher salt.

Gradually add the flour mixture to the butter mixture, beating until just combined. Fold in the finely chopped toasted almonds until evenly distributed throughout the dough.

Shape the dough into a disc, wrap in cling film and refrigerate for at least 30 minutes to set.

Preheat the oven to 175°C (350°F). Line baking sheets with greaseproof paper or silicone mats.

In a medium bowl, combine the unsweetened coconut flakes, sweetened condensed milk, egg whites and a pinch of kosher salt. Whisk until well combined.

Take about 1 tablespoon of the cookie dough and gently flatten it in your hand. Spoon a small amount of the coconut filling into the centre. Fold the dough over the filling and roll into a ball. Place on the prepared baking tray.

Gently press a whole almond on top of each biscuit.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Once the cookies are completely cooled, dip the bottoms of each cookie into the melted milk chocolate. Place the dipped cookies back onto the parchment-lined baking sheet.

Allow the chocolate to set at room temperature or refrigerate briefly until firm.
