Ingredients

  • unsalted pistachios, 1 cup
  • whole milk, 2 cups
  • heavy cream (36% fat), 1 cup
  • sugar, 3/4 cup
  • vanilla extract, 1 teaspoon
  • salt, a pinch

Preparation

Grind the pistachios in a blender or coffee grinder to a fine powder. You can leave some larger pieces for texture.

In a small saucepan, heat the milk with the ground pistachios until it begins to steam, but do not bring it to a boil.
