Ingredients
- 1 bunch of rhubarb, about 500 g
- Juice of 1 orange or 1/2 cup orange juice
- 20 dates
- 50 g brown sugar

Preparation
- Wash the rhubarb, trim the tough ends, and cut into pieces. Pit the dates and chop them into pieces as well.
- In a large skillet with a thick bottom, place the rhubarb, add the brown sugar, and pour in the orange juice. Bring to a boil, cover, and simmer over low heat until the rhubarb is tender.
- Uncover the skillet, add the chopped dates, stir, increase the heat, and cook, stirring, until excess liquid evaporates and you achieve a jam-like consistency with the rhubarb. Remove from heat.
- Spread the rhubarb compote over the pancakes, fold them in half or roll them up. Serve drizzled with maple syrup.
