Molten Reese's Baked Oats

Molten Reese’s Baked Oats combine the comforting flavours of oats, cocoa and a gooey peanut butter filling for a decadent breakfast or dessert treat. This recipe features a warm, chocolatey centre surrounded by wholesome oats, creating a delicious and satisfying dish.

Ingredients:

For the oatmeal:

  • 2 heaped tablespoons Mornflake Oatmeal Fine (or similar fine oatmeal)
  • 1 heaped tablespoon Mornflake Fibreful Oat Bran (or oat bran of choice)
  • 1 tablespoon coconut sugar or equivalent sweetener
  • 1 tablespoon cocoa powder
  • 1 tablespoon unflavoured whey protein powder (optional, for extra protein)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 150ml liquid (such as milk, almond milk or water)

For the filling:

  • 1 tablespoon cream cheese
  • 2 tablespoons milk
  • 1 tablespoon peanut butter
  • 1 tsp maple syrup or other sweetener of choice

To top:

  • Chocolate chips or crushed peanut butter cups
  • Pinch of Maldon salt (or other flaky sea salt)

Method:

Preheat the oven to 180°C (350°F).

In a bowl, combine the Mornflake Oatmeal Fine, Mornflake Fibreful Oatbran, coconut sugar (or sweetener), cocoa powder, unflavoured whey protein powder (if using), baking powder and a pinch of salt.

Gradually add the liquid (milk, almond milk or water) until you have a thick batter consistency. Adjust the amount of liquid as needed to achieve the desired texture.

In a small bowl, whisk together the cream cheese, milk, peanut butter and maple syrup (or other sweetener) until smooth.

Grease a ramekin or ovenproof dish with butter or cooking spray.

Pour half of the oat mixture into the prepared dish and spread evenly.

Spoon the prepared filling mixture evenly over the oat mixture in the dish, leaving a rim around the edges.

Gently spoon the remaining oat mixture over the filling, making sure the filling is completely covered.

Sprinkle chocolate chips or crushed peanut butter cups over the oatmeal. Add a pinch of Maldon salt for a contrasting flavour.

Bake in a preheated oven for 20-25 minutes, or until the top has set and the oats are cooked through.

Remove from the oven and allow to cool slightly before serving.

Serve warm for a delicious breakfast or dessert!
