Traditional Doughnuts

This recipe for doughnuts is always fried by my mom. They are classic doughnuts with perfectly balanced ingredients. They smell of vanilla and homemade baking.

Ingredients

  • 25 g fresh yeast
  • 125 ml (1/2 cup) warm milk
  • 1 teaspoon sugar
  • 2 egg yolks
  • 1 egg
  • 4 tablespoons vanilla sugar
  • 300 g (2 cups) all-purpose flour
  • 1/3 teaspoon salt
  • 35 g butter
  • Oil for frying
  • 3 tablespoons candied orange peel or ready-made candied orange
  • Icing: 1 cup powdered sugar dissolved in 1-2 tablespoons hot water or lemon juice
  • Or powdered sugar for dusting

Preparation

Prepare the starter: Crumble the yeast into a large cup, add 2 tablespoons of flour, 1 teaspoon of sugar, and 1/4 cup of warm milk. Mix and let it rise for 15 – 20 minutes.

Beat egg and egg yolks with vanilla sugar. Sift flour into a large bowl and mix with salt. Add the risen starter, remaining warm milk, and beaten eggs to the flour.

Mix slowly, then knead for 15 minutes. Add melted butter and knead for another 5 minutes. Cover the dough with a cloth and let it rise in a warm place.

When the dough doubles in size (after about 1 and 1/2 hours), turn it out onto a floured surface and knead briefly to remove air bubbles. Roll out into a thick disk (you can sprinkle with flour if needed) to cut out 10 circles. Use a sharp glass to cut out disks from the dough and set aside to rise for about 45 minutes.

Fry in batches (4 pieces at a time) in heated oil until nicely golden brown (they should not brown too quickly). Flip halfway through frying. Remove onto paper towels.

Drizzle with icing mixed with candied orange peel or simply dust with powdered sugar mixed with vanilla sugar.
