Ingredients:
- 100g porridge oats
- 1 tsp baking powder
- 1 banana, peeled and chopped
- 1 tbsp maple syrup or honey
- 2 eggs
- A pinch of mixed spice or ground cinnamon
- 100g chocolate chips, blueberries, or raspberries, plus extra for serving
- Flavourless oil, for greasing the ramekins
Method:
Preheat the oven:
Preheat the oven to 180°C.
Blend the base:
Place the oats, baking powder, banana, maple syrup or honey, eggs and mixed spices or cinnamon in a blender. Blend until smooth.
Add the mix-ins:
Stir in your choice of chocolate chips, blueberries or raspberries.
Prepare the ramekins:
Grease the ramekins with an odourless oil.
Bake:
Divide the batter between the ramekins.
Bake for 20-25 minutes or until the tops are golden and a toothpick inserted in the centre comes out clean.
Serve:
Allow the baked oatmeal to cool slightly, then serve with additional fruit or chocolate chips on top.
