Szneki with Glaze, Curd Cheese, and Strawberries

Doughnuts are well known, but szneki are popular mainly in the Poland. Prepare them according to this recipe and see how great they taste with curd cheese and strawberries!

Ingredients

Dough

  • Sugar – 30 g
  • Vanilla – 3 g
  • Butter – 40 g
  • Wheat flour – 300 g
  • Whole milk (3.2%) – 150 ml
  • Salt – 2 pinches
  • Fresh yeast – 22 g
  • Eggs – 2

Filling

  • Vanilla pudding – 40 g
  • Powdered sugar – 110 g
  • Strawberries – 100 g
  • Ground curd cheese – 200 g
  • Eggs – 2

Glaze

  • Powdered sugar – 30 g
  • Lemon juice – 25 ml
  • Water – 2 tablespoons

Additional

  • Egg – 1
  • Wheat flour – 20 g
  • Fresh mint – 2 g
  • Strawberries – 100 g

Preparation:

Step 1: Prepare the Sponge Combine yeast with sugar in a bowl and stir until dissolved. Add about 50 ml of warm (not hot) milk (it should have a temperature of about 40°C). Mix and set aside for a few minutes until the yeast begins to work.

Step 2: Prepare the Dough Transfer flour into a mixing bowl, make a small well in the center, and pour in the sponge. Gently mix it with the flour. Cover the bowl with a cloth and let it rest in a warm, draft-free place for about 15-20 minutes.

Step 3: Knead the Dough To the flour mixture with sponge, add vanilla seeds, salt, and 100 ml of milk. Knead the dough starting at medium speed using a dough hook. Once the ingredients are combined, add melted butter and egg yolks. Knead until you get a smooth, uniform dough.

Transfer the kneaded dough to a bowl dusted with flour, cover with a cloth, and let it rise in a warm, draft-free place until it doubles in size.

Step 4: Prepare the Filling Combine curd cheese in a bowl with powdered sugar, pudding, and egg yolks. Mix thoroughly until the ingredients are well combined and form a uniform mass.

Step 5: Shape the Szneki Transfer the risen dough onto a floured surface, knead it briefly, and then shape it into a rectangle, sprinkling it with flour occasionally. Cut the dough lengthwise into thin strips – you should get about 6 strips.

Twist each strip of dough in your hands to create a wavy shape on the edges, then roll it up, forming a round snail-shaped bun. Place the szneki on a baking sheet lined with parchment paper, leaving space between them. Cover with a cloth and let them rise in a warm, draft-free place.

Step 6: Fill the Szneki In the risen dough, create small indentations using a cup with a narrow bottom. Transfer the curd cheese filling into a piping bag, cut off the tip of the bag. Fill each indentation generously with the curd cheese filling.

Place chopped strawberries on top of the curd cheese filling.

Brush the edges of the buns with beaten egg white using a pastry brush.

Step 7: Bake the Szneki Place the szneki in an oven preheated to 170°C. Once the pastries are in the oven, increase the temperature to 180°C and bake for about 12-15 minutes.

Remove the baked szneki from the oven and let them cool.

Step 8: Glaze and Serve the Szneki In a bowl, combine powdered sugar with water and lemon juice. Mix until well combined. The glaze should have the consistency of thick cream and should be pliable – adequate mixing will achieve this.

Take a ready-to-use pastry bag or create a cone from parchment paper and fill it with the glaze. Cut off the tip of the cone. Pipe the glaze onto the top of the cooled pastries, creating thin, decorative patterns. Place chopped strawberries on top of the finished pastries. Garnish with fresh mint leaves.
