Waffles with Yogurt and Blueberries

In this dessert, blueberries reign supreme! Homemade waffles served with Greek yogurt, blueberry compote, and fresh fruits have the potential to become one of your favorite sweet treats! Check out how delicious they are!

Ingredients

Waffles

  • Sugar – 1 tablespoon
  • Eggs – 2
  • All-purpose flour – 350 g
  • Milk – 460 ml
  • Canola oil – 110 ml
  • Baking powder – 1 teaspoon
  • Salt – a pinch

Blueberry Compote

  • Blueberries – 500 g
  • Cornstarch – 2 teaspoons
  • Lemon juice – 25 ml
  • Maple syrup – 2 tablespoons
  • Water – 200 ml

Additional

  • Powdered sugar – 1 teaspoon
  • Greek yogurt – 400 g
  • Canola oil – 2 tablespoons
  • Blueberries – 200 g

Preparation:

Step 1: Prepare the Waffle Batter Separate egg yolks from egg whites. Place yolks and whites in separate bowls.

In a bowl, thoroughly mix flour, baking powder, salt, and sugar. In another bowl, combine the wet ingredients: milk, oil, and egg yolks. Mix well.

Pour the wet ingredients into the bowl with dry ingredients. Mix everything thoroughly using a whisk until a uniform batter forms.

Step 2: Beat the Egg Whites Whip the egg whites into stiff peaks in a mixing bowl, then gradually fold them into the prepared waffle batter. Gently incorporate the beaten egg whites into the batter using a whisk, being careful not to lose the fluffiness of the whites.

Step 3: Bake the Waffles Grease a cold waffle iron with oil. Preheat the waffle iron. Bake the waffles in a well-heated waffle iron for about 3-4 minutes, then transfer them to a wire rack to cool.

Tip! The higher the wattage of the waffle iron, the crispier the waffles will be.

Step 4: Prepare the Blueberry Compote Transfer blueberries to a saucepan. Add maple syrup, lemon juice, and 150 ml of water. Bring to a boil and simmer over low heat for about 5-10 minutes.

In a small bowl, mix cornstarch with 50 ml of water. Pour this mixture into the simmering blueberries and continue cooking, stirring constantly, until the mixture thickens.

Tip! If the compote is too thick, add more water and mix again.

Pour the finished compote into a jar and let it cool.

Step 5: Serve Waffles with Blueberry Compote Top the cooled waffles with a portion of Greek yogurt and cooled blueberry compote. Arrange fresh blueberries on top. Sprinkle with powdered sugar sifted through a sieve.
