Ingredients:
- Gelatin – 3 sheets
- Coconut milk – 425 ml
- Milk – 100 ml
- Sugar – 6 tbsp
- Lime juice – 3 tbsp
- Passion fruit – 2
Preparation:
Step 1: Prepare the Panna Cotta
- Soak the gelatin sheets in cold water until soft.
- In a saucepan, combine the coconut milk, milk, and 3 tablespoons of sugar. Heat until it comes to a boil, then simmer on low heat for about 5 minutes.
- Remove the softened gelatin from the water, squeeze out excess water, and dissolve it in the hot coconut milk mixture.
- Rinse molds with cold water, then pour the mixture into the molds. Place in the refrigerator to set for at least 2 hours.
Step 2: Prepare the Sugar Syrup
- In a small saucepan, bring 50 ml of water, 3 tablespoons of sugar, and the lime juice to a boil.
- Cut the passion fruits in half, scoop out the pulp, and add it to the sugar syrup. Allow the mixture to cool.
Step 3: Serve the Panna Cotta
- To serve, unmold the panna cotta onto plates.
- Spoon the passion fruit syrup over the panna cotta.
- Garnish with fresh mint and lime slices.
