It’s a recipe that promises to fill your kitchen with the aroma of fresh berries and the satisfaction of creating something beautiful and delicious from scratch. The bright red of the strawberries will make your dessert table pop, and the taste? Everyone will be asking for seconds!
Ingredients:
- 1 (16 ounce) package fresh strawberries
- 1 (15.25 ounce) package white cake mix
- 3 large eggs
- ¾ cup oil
- 1 (3 oz) packet strawberry-flavoured gelatine (such as Jell-O®)
Strawberry Frosting:
- ¼ cup butter, softened
- 1 (4 oz) package cream cheese, softened
- 2 ½ cups powdered sugar, or more if needed
- 1 teaspoon vanilla extract
- ½ cup strawberry puree
Method:
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a baking tray.
Rinse and pat the strawberries dry. Set a few aside for garnishing and purée the rest in a blender.
In a large bowl, mix the cake mix, eggs, oil and gelatine until well combined.
Fold ½ cup of the strawberry puree into the cake mixture.
Pour the mixture into the prepared tray.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the centre comes out clean.
Allow the cake to cool completely before frosting.
To make the strawberry frosting:
Cream the softened butter and cream cheese together until smooth.
Gradually add the icing sugar and beat until fluffy.
Stir in the vanilla extract and remaining strawberry puree.
Spread the icing over the cooled cake.
Garnish with sliced strawberries.
