Banana Cake

A crispy base, fluffy banana mass, and fruity jelly – this delicious trio makes up the banana cake, which you can prepare without baking. Use very ripe bananas for this!

Ingredients:

Base:

  • Butter cookies – 250 g
  • Butter – 100 g

Banana Mass:

  • Bananas – 5 pcs.
  • Orange jelly – 154 g
  • Lemon juice – 2 tablespoons
  • 30% cream – 100 g
  • Water – 200 ml

For Decoration:

  • Orange jelly – 77 g
  • Orange – 1 pc.
  • Raspberry – 70 g
  • Strawberry – 70 g

Preparation:

Step 1: Prepare the Base Finely chop the butter cookies so that their pieces are noticeable in the finished base. Combine the chopped cookies in a bowl with softened butter cut into smaller pieces and knead the mixture with your hands until all ingredients are combined.

Transfer the mixture to a mold, spread it evenly over the entire bottom, and press it down to level the layer. Place the base in the refrigerator while preparing the banana mass to allow the butter to solidify.

Step 2: Prepare the Banana Mass Boil water in a saucepan, add orange jelly, and stir until dissolved. Set aside to cool slightly.

Combine bananas with cream in a blender glass. Add lemon juice and blend until smooth and homogeneous. While blending, add the cooled orange jelly. Blend for a while until all ingredients are combined.

Step 3: Chill the Mass Pour the prepared banana mass into the mold with the chilled base. Place the mold in the refrigerator for a minimum of 2 hours, preferably overnight. The banana mass should solidify completely.

Step 4: Decorate the Cake Boil water in a saucepan, add the remaining jelly, and stir until dissolved. Set aside to cool completely.

Segment the orange, remove the stems from the strawberries, and slice them. Arrange pieces of orange, strawberry, and raspberry in a circle on top of the solidified banana mass.

Pour the first portion of cooled jelly into the mold so that it gently covers the fruits – this will help them stick to the banana mass. Place the mold in the refrigerator for about 5-10 minutes.

After this time, pour the remaining jelly into the mold. Place the mold in the refrigerator for about 1-2 hours until the top layer of jelly is completely set.

Remove the sides of the mold, gently loosen the base with a knife to separate it from the tray. Transfer the cake to a serving platter.

Tip! To make it easier to remove the cake from the mold, you can gently heat the sides of the mold with a handheld gas torch. This way, you won’t scratch the mold from the inside.
