Oat, coconut and cocoa cookies

The combination of oats, almonds and coconut provides a nutritious base packed with fibre and healthy fats. With banana as the main sweetener, these cookies are a great way to satisfy your sweet tooth in a natural way.

Ingredients:

  • 1 cup rolled oats (not instant)
  • 1/2 cup raw organic almonds, ground to a powder
  • 1 cup shredded coconut
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon aluminium-free baking powder
  • 2 organic bananas, peeled and mashed
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons unrefined coconut oil, gently heated until liquid
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup cocoa nibs
  • 1/4 cup organic semi-sweet chocolate chips

Method:

Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.

In a large bowl, mix together the oats, ground almond powder, desiccated coconut, sea salt, ground cinnamon and baking powder.

In a separate bowl, mix together the mashed bananas, vanilla extract, liquid coconut oil and extra virgin olive oil.

Pour the wet ingredients into the dry and mix until just combined.

Fold in the cocoa nibs and chocolate chips.

Drop the cookie mixture by the spoonful onto the prepared baking tray, about 2 inches apart.

Bake for 12-15 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
