Delightful recipe for a cheesecake with a chocolate twist.
Ingredients
Chocolate Crumble:
- Butter – 200 g
- Sugar – 150 g
- Almonds – 100 g
- Wheat flour (type 450) – 270 g
- Cocoa powder – 40 g
- Dark chocolate – 50 g
Cheese Mixture:
- Ground cheesecake curd – 1 kg
- Eggs – 5 pcs.
- Dark chocolate – 350 g
- Butter – 80 g
- Sugar – 200 g
- Cocoa powder – 25 g
- Potato starch – 40 g
- 30% cream – 150 ml
- Lime – 1 pc.
Glaze:
- 30% cream – 50 ml
- Dark chocolate – 100 g
- Butter – 20 g
Preparation
Step 1: Prepare the Chocolate Crumble Melt the butter
Sift flour mixed with cocoa into a bowl. Add sugar and diced butter. Knead the crumble until small pieces of dough form. Finally, add diced almonds and crushed chocolate. Mix thoroughly.
Step 2: Bake the Chocolate Crumble Grease the baking pan with butter and lightly dust with flour. Spread half of the crumble evenly on the bottom of the pan. Sprinkle the remaining crumble evenly on a baking sheet lined with parchment paper.
Place the baking pan in an oven preheated to 180°C on the top shelf, and the baking sheet with crumble on the bottom. Bake for about 30 minutes. After 20 minutes, mix the crumble on the baking sheet and bake for another 10 minutes. Remove both trays from the oven and let cool.
Step 3: Add Lime Zest to the Cheese Mixture Season the soup with lime zest
The cheese, eggs, butter, and cream should be at room temperature. Combine cheese with potato starch, cocoa, and sugar using a mixer. Gradually add cream. Melt the butter in a saucepan with dark chocolate. Add one egg at a time to the mixture while stirring continuously. Once the ingredients are well combined, add the melted chocolate with butter – mix thoroughly. Add grated zest from a washed lime and squeezed juice.
Step 4: Bake the Cheesecake Pour the mixture onto the cooled crumble in the baking pan. Place in an oven preheated to 160°C, with two trays filled with water inside. Place one tray on the top shelf and the other with the cake mold so that water does not get into the dough. Bake for about 60-70 minutes. Remove the cheesecake from the oven and let cool.
Step 5: Sprinkle the Cake with Crumble Season the soup with lime zest
Bring the cream to a boil. Add the crushed chocolate, mix thoroughly. Finally, add softened butter. Pour the cooled cheesecake with the glaze, then sprinkle with crumble.
