It’s always a good day to make pancakes, especially when you have a recipe for a delicious plum sauce.
Ingredients
Pancakes
- Sugar: 2 tablespoons
- Cinnamon: 1 teaspoon
- Egg: 1 piece
- Butter: 2 tablespoons
- Milk: 300 ml
- Salt: 0.5 teaspoon
- Wheat flour: 120 g
Plum sauce
- Sugar: 5 tablespoons
- Cinnamon: 0.5 teaspoon
- Almonds: 50 g
- Plums: 300 g
- Water: 100 ml
Preparation
Sift the flour, mix with salt, sugar, and cinnamon. Add the egg and gradually pour in the milk while whisking until all lumps disappear. Let the batter rest for 20 minutes.
Heat a portion of the butter in a pan and fry thin pancakes. Add more butter to the pan as needed while frying the subsequent pancakes.
Pit the plums and put them in a saucepan with their skins. Add the sugar and water, and cook over low heat until the plums break down and the sauce thickens. Season with cinnamon to taste.
Place the pancakes on a plate and pour the sauce over them. Toast the chopped almonds in a dry pan until they start to turn golden. Sprinkle the almonds over the pancakes.
