These Cream Cheese Pancakes are a delicious twist on the classic breakfast favourite. They’re light, fluffy and have a subtle richness thanks to the cream cheese. The addition of canela adds a warm spice that’s perfect for a cosy morning.
Ingredients:
- 2 oz. cream cheese
- 2 large eggs
- 1/3 teaspoon baking powder
- 1/3 teaspoon canela (cinnamon)
- 1 packet stevia (1/2 tsp or 2-3 drops liquid)
- 1/2 tsp vanilla extract (optional)
Method:
Soften the cream cheese in a bowl.
Add the eggs, baking powder, canela, stevia and vanilla extract to the bowl with the cream cheese.
Using a hand mixer or blender, blend all the ingredients together until smooth.
Heat a nonstick frying pan over medium heat and lightly grease with butter or oil.
Drop small rounds of batter onto the hot pan.
Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for a further 1-2 minutes on the other side until golden brown.
Serve warm with your favourite topping such as fresh berries, whipped cream or a drizzle of maple syrup.
